Serving Suggestions: Prepare the meat of your choice (steaks, chicken, fish or shrimp) in advance by liberally covering with Andy Roo's Cajun Blackened Seasoning. Rub spices into meat thoroughly. Let stand for at least 20 minutes. Pre-heat your heavy-bottomed skillet on high heat (use your vent). When skillet is very hot, put in the meat. Watch closely as meat is seared.
