Serving Suggestions: Lightly oil griddle (before each pouring. Preheat griddle to 400 degrees. Blend together 3/4 cup water and one 6-ounce package of Bruce's Sweet Potato Pancake and Waffle Mix. Pour 1/4 cup batter on griddle for each pancake. Bake on hot griddle for 2 minutes on each side. Each package of Bruce's Sweet Potato Pancake Mix makes about 3 servings (2 pancakes per serving).
For added flavor and fun, mix blueberries, pecans, etc. into the batter just prior to cooking.

Sweet Potato Muffin Recipe
2 1/2 cups Bruce's Sweet Potato Pancake Mix (about 3 packages)
1 2/3 cups milk
Optional: Add pecans, blueberries or strawberries
1. Stir until smooth.
2. Pour batter into muffin pan.
3. Bake 18 to 22 minutes.
Makes about 12 muffins.
